ZAC'S SPAGHETTI AND MEATBALLS

INGREDIENTS

Tomato Sauce ingredients:
1 can 28oz San Marzano whole tomato’s
Handful of chopped garlic & onion
A bunch of parsley & basil
A showering of parmesan cheese
3 tbs olive oil
Season with salt & pepper
Pasta ingredients:
1 cup flour
1 cup semolina
4 eggs
2 tbsp olive oil
Pinch of salt
Meatball Ingredients:
1 pound ground beef
1 egg
~ 1/4 cup breadcrumbs soaked in milk
~ Handful of chopped garlic & onions
A bunch of parsley and basil ~ 1/4 cup parmesan cheese ~ Season with salt & pepper
In this video, Zac Goldberg shows us his recipe for meatballs and homemade spaghetti. Full of humor and charisma, Zac entertains us as he cooks.
Method

1.Heat olive oil on low then add chopped garlic and onion and sauté until golden brown.
2.Then add tomato, parmesan, parsley, basil, and season with salt and pepper. Turn the heat up to medium and let the sauce come to a simmer. Then turn it back on low and let it marinate while you make your pasta and meatballs.
3. In your food processor bowl, add your flour, semolina, eggs, olive oil, and salt. Start your mixer and let it go for 10mins until dough forms. Cover dough in plastic wrap and let hang out for 30mins.
4. Cut dough into 4 equal pieces. Work with one piece at a time and flatten your dough through pasta machine roller, starting with the widest setting. Lightly flour the pasta sheet as you fold and flatten it through the machine, reducing settings notch by notch until you reach the narrowest setting. Do this with each of your dough pieces.
5. Cut pasta sheet into thin strands and add flour so they don’t stick. Cook pasta in boiling salted water for about 3-4mins.
6. Sauté your garlic and onions for the meatballs, cook until golden brown.
7.Then in a bowl, add meat, salt, pepper, egg, parm, parsley, basil, breadcrumbs, and your sauté garlic and onion. Mix with hands or if you have one, food processor then form golf size balls.
8.Heat olive oil on high in a cast iron. Add your meatballs and cook for a couple minutes until seared. Then add the meatballs to your sauce. Cook pasta with sauce add meatballs and buon appetito!
DANIEL'S FRENCH TOAST​

INGREDIENTS

6 slices of brioche bread
1 egg
1/2 tablespoon of sugar
1/4 (or less) teaspoon of cinnamon
1 teaspoon vanilla extract
100ml of milk
Daniel says this recipe for french toast was given to him whilst he was on his honeymoon in Barbados. A popular breakfast dish at the hotel Daniel and his wife were staying at, they fell in love with the breakfast. On their last day at the resort, the couple asked the chef to share his secret recipe.
